PORK CHOP - POTATO - ONION
SKILLET
 
4 thin pork chops, about 1 lb.
1 lg. onion, sliced thin
3 med. potatoes, sliced thin
1 tsp. salt
1/8 tsp. pepper
About 1 c. water

Trim excess fat from chops. In large heavy skillet over medium heat render the fat. Add chops and, turning once, brown well. Place onions, then potatoes on chops; sprinkle with salt and pepper. Add water and bring to a boil; reduce heat, cover and adding more water if needed, simmer about 30 minutes or until potatoes are tender. Serve from skillet. Makes 4 servings.
