SWISS VEGETABLE MEDLEY 
1 - 16 ounce package california blend vegetables, thawed and drained
1 can cream of mushroom soup
1 cup shredded Swiss cheese, divided
1/3 cup sour cream
pepper to taste
1 - 4 ounce jar chopped drained pimentos- optional
1 - 2.8 ounce can French fried onions, divided

Combine vegetables, soup, 1/2 cup cheese, sour cream, pepper, pimentos, and 1/2 can French fried onions. Pour into greased 1 quart casserole.

Bake, covered, for 30 minutes at 350°F. Top with remaining cheese and onions.

Bake, uncovered, 5 minutes longer.
