SWISS STEAK 
Pound 6 tablespoons seasoned flour into sides of 2 pound round or flak steak (1 1/2 inch thick). Brown in hot fat in heavy skillet. Add:

2 c. cooked tomatoes (#2 tall can)
1 onion, sliced
1 stalk celery, diced

Cover. Cook over low heat or in moderate 300 degree oven until tender (2 to 2 1/2 hours. Uncover the last 1/2 hour. To cook down sauce to a rich thickness. Serve hot.
