SUMMER SAUSAGE 
5 lb. ground beef (deer)
5 tbsp. Tender Quick salt
2 1/2 tsp. cracked pepper
2 1/2 tsp. garlic salt
2 1/2 tsp. whole mustard seed
2 1/2 tsp. liquid smoke

Knead all ingredients together for 5 minutes, cover, place in refrigerator and repeat kneading on 2nd, 3rd and 4th day (best not to use metal pans to store meats - may taint meat). After kneading on the 4th day roll into 1 pound logs, place on broiler pan, cook in oven for 4 hours at 175 degrees. Meat will appear red when finished, refrigerate or freeze or eat after cooling.
