ROMA MEAT LOAF 
1 1/2 lbs. ground beef
1 egg
3/4 c. cracker crumbs
1/2 c. fine chopped onion
2 (8 oz.) cans tomato sauce with cheese
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. black pepper
Mozzarella cheese

Combine beef, eggs, cracker crumbs, onion, 1/3 cup tomato sauce, salt, oregano and pepper. Mix well. Put into a 10"x12" baking dish. Bake at 350 degrees for 1 hour. Drain off excessive fat, pour on rest of tomato sauce and Mozzarella cheese and heat. Serve.
