EGGPLANT ROMA 
2 c. eggplant, diced
2 cans pimiento
1 sm. bay leaf
2 tsp. lemon juice
1 c. tomato juice
1 (4 oz.) can mushrooms
1/4 tsp. oregano

Sprinkle eggplant with lemon. heat tomato juice and all ingredients. Add eggplant; cover and simmer 20 minutes.
