PICKLE RELISH 
4 c. unpeeled cucumbers, chopped fine
1 c. green peppers, chopped fine
1/2 c. sweet red pepper, chopped fine
3 c. onion, chopped fine
3 c. celery, chopped fine
1/4 c. salt
3 1/2 c. sugar
2 c. white vinegar
1 tbsp. celery seed
1 tbsp. mustard seed

Mix and sprinkle with salt, cover with water. Let stand 4 hours. Drain thoroughly. Press out excess liquid.

Combine sugar, vinegar, celery seed and mustard seed. Bring to boil, stirring until sugar is dissolved. Stir in drained vegetables. Simmer 10 minutes. Pack in sterilized jars to 1/2 inch from top. Seal. Process in hot water bath 10 minutes.
