MEXICAN CORNBREAD 
1 1/2 c. cornmeal
2 eggs
3 tsp. baking powder
1 tsp. salt
1/2 c. cream style corn
1 c. buttermilk
1/2 c. oil
4 tbsp. onion, chopped fine
3 peppers, chopped
1 c. Sharp Cheddar cheese, grated

Mix all ingredients, except cheese, together well. Heat iron skillet and grease with oil. Pour half the mixture into heated and greased skillet. Spread 1 cup grated Sharp Cheddar cheese on mixture. Bake at 350 degrees until medium brown.
