ORIENTAL CHICKEN & RICE 
1 onion
3-4 boneless chicken breasts
1 can chicken broth
1 can water
1 c. UNCLE BEN'S® converted rice
4 tbsp. soy sauce
1 sm. can pimiento
1/2 green pepper, chopped

Brown slivers of onion until clear, add chicken, cut in thin strips and brown. Add broth, water, rice and soy sauce. Cover and bring to boil then reduce to simmer for 20 minutes. Add pimientos and green pepper and cook additional 5 to 10 minutes.
