SWEET POTATO CASSEROLE 
3 c. sweet potatoes, cooked & mashed
1/2 c. butter
3/4 c. sugar
2 eggs, slightly beaten
1 tsp. vanilla

Beat all the above ingredients together and put into a casserole dish.

TOPPING:

3/4 c. brown sugar
1 c. pecans (1/2 c. chopped & 1/2 c. halves)
1/3 c. Bisquick

Mix ingredients for topping together and spread on top of mashed potato mixture and then dot with butter. Bake at 350 degrees for 1 hour and 15 minutes.
