RHUBARB UPSIDE DOWN CAKE | |
1/4 tbsp. butter 2 c. rhubarb, cut up 3 tbsp. water 1/2 tsp. vanilla 1/4 tsp. salt 1 c. brown sugar 2 egg yolks, beaten 1 c. white sugar 1 c. flour 2 egg whites Melt brown sugar and butter in a deep 9 inch pan or skillet. Add rhubarb, unpeeled to this mixture. Beat together egg yolks, water and brown sugar. Add sifted flour, baking powder and salt. Add vanilla and fold in stiffly beaten whites. Pour over the fruit mixture and bake in a 355 degree oven for 45 minutes. When baked, turn upside down on a large plate. Serve with whipped cream. |
