RHUBARB UPSIDE DOWN CAKE | |
3 c. diced rhubarb 10 lg. marshmallows, cut in half 3/4 c. sugar 1/2 c. butter 1 c. sugar 2 eggs 1 3/4 c. flour 1/4 tsp. salt 3 tsp. baking powder 1/2 c. milk Place rhubarb in bottom of 9x13 pan. Arrange marshmallows on top. Sprinkle 3/4 cup sugar over all. Cream butter with 1 cup sugar until light and fluffy. Add 1 egg at a time, beat well after each one. Add sifted dry ingredients with milk, beating until smooth. Spread over rhubarb. Bake at 350 degrees for 40 minutes. Cool 5 minutes; turn out on plate. |
