Granny Ellen English concocted this family favorite quick dessert for her rhubarb loving family. Of course, she made her own cake batter.
In an iron skillet, dice 4 cups of washed rhubarb (frozen rhubarb works well, too). Add 3/4 stick of butter and 1 cup sugar. Cook together until thick. Pour over top of cooked rhubarb, 1 Jiffy cake mix or 1/2 larger cake mix. Bake at 350 degrees in oven until, cake bounces back to the touch. Turn cake out on large deep plate. Serve hot or cold. I like this one because you can prepare it as you prepare a meal.
