MANICOTTI (STUFFED SHELLS) | |
2 tbsp. olive oil 1 lb. fresh spinach, washed, dried and chopped 2 tbsp. onion, chopped 1/2 tsp. salt 1/2 tsp. oregano 1 lb. ground beef 2 tbsp. dry bread crumbs 1 egg 1 (6 oz.) can tomato paste 1 pkg. manicotti shells, cooked 1 1/2 tbsp. butter 2 tbsp. grated Parmesan cheese 1 (14 oz.) can tomato sauce 2 tbsp. grated mozzarella cheese Heat olive oil in skillet. Add spinach, onion, salt, oregano and meat. Mix well. Cook until meat is no longer pink. Set aside to cool slightly. Add bread crumbs, egg and 2 tbsp. tomato paste. Mix well. Stuff manicotti with mixture. Put in a greased baking dish, side by side. Spread butter over stuffed manicotti. Spread tomato paste over manicotti. Sprinkle with grated Parmesan cheese. Pour tomato sauce over. Sprinkle mozzarella cheese on top. Bake, covered, at 425°F for 15 minutes or until mozzarella cheese melts. |
