VEGETABLE SOUP 
2 c. potatoes, cubed
1 sm. onion, cut into rings
1 c. carrots, sliced
1/2 c. celery, chopped
1 c. sweet peas
1 c. string beans
3 tomatoes, wedges
2 bay leaves
Salt & pepper to taste
1 tsp. basil

In saucepan boil potatoes 10 minutes, drain but save water. In big pot lightly saute potatoes and all vegetables except tomatoes. Add bay leaves and simmer until vegetables are almost tender, then add tomatoes, salt, pepper and basil; and retained water if too thick.
