MINESTRONE SOUP | |
1 onion, diced 2 cloves garlic, sliced 1 tbsp. butter (or olive oil) Water to fill 3/4 of your pot 1 (28 oz.) can crushed tomatoes 1 (8 oz.) can tomato sauce 2 carrots, sliced 2 potatoes, diced 1 c. red kidney beans 1 tsp. dried oregano 1 tsp. dried parsley 1/2-1 tsp. onion powder 1/2-1 tsp. garlic powder Salt & pepper to taste 8 oz. pasta (Ditalini, macaroni or shells work well) Saute onion and garlic in butter. Pour enough water to fill 3/4 of your pot right on top. Add the rest of the ingredients except the pasta. Simmer 45 minutes to an hour. Ten minutes before it's done, add pasta. Stir occasionally and serve hot. You can also add zucchini, squash, corn, peas or Parmesan cheese for variety. |
