APPLE CAKE 
2 c. sugar
2 1/2 c. self-rising flour
1 c. oil (I use Crisco)
3 eggs
3 c. diced apples
1 c. raisins
1 c. nuts, chopped (pecans)
1 tsp. vanilla

Combine all ingredients in large mixing bowl. Mix with spoon until thoroughly moist. Pour into greased and floured tube pan.

Bake at 350°F for 1 hour. Cool; turn out on plate.

Glaze:

3 tbsp. water
2 tsp. vanilla
1 c. powdered sugar

Mix thoroughly; drizzle over cooled cake.
