APPLE CAKE 
1 1/2 c. cooking oil
2 c. sugar
3 large eggs
3 c. flour
1 tsp. salt and soda
2 tsp. vanilla
3 c. fresh, sliced apples
1 1/2 c. chopped pecans
1/2 tsp. cinnamon

Cream oil and sugar. Add other ingredients and mix well. Put in a greased and floured Bundt pan and bake at 325°F for 1 to 1 1/2 hours. Leave in pan for a little while, but loosen cake from sides. Top with following glaze.

Glaze:

1 c. light brown sugar
1 tsp. vanilla
1/4 c. cream or milk
1 stick butter

Mix all ingredients together and put in a saucepan. Boil for 2 1/2 minutes. Pour over turned out warm cake. Top with fresh apple slices if desired.
