SQUASH RELISH | |
2 c. ground squash 2 c. ground onions 1 or 2 tbsp. salt 1/2 c. diced green and red pepper (hot and sweet) 2 c. vinegar 3 c. sugar 1 tsp. celery seed 1 tsp. mustard seed 3 tbsp. pickling spice Pinch of turmeric Combine squash and onion. Sprinkle with salt and let stand for 1 hour. Combine pepper, vinegar, sugar, celery seed, mustard seed and pickling spices (tie in cloth). Let come to a full boil. Add squash and onions and let boil for 30 minutes. Seal in hot sterilized jars. Good with all vegetables. |
