CHILI CHEESE MEAT LOAF | |
1 (8 oz.) can tomato sauce 1/2 c. tomato catsup 1 lb. ground beef 2 eggs 1 c. fresh bread crumbs 1 (7 oz.) can Ortega whole green chilies 1 (8 oz.) pkg. Jack cheese In a small bowl, mix tomato sauce and catsup together. In a large bowl blend beef, eggs, crumbs and 1/2 cup tomato mixture. Stuff four whole green chilies with 1/2 of the cheese cut into strips. Grate remaining cheese and cut remaining chilies into strips. In a well greased 5 x 10 x 3 inch loaf pan, pour 1/2 tomato mixture to cover bottom. Spread 1/2 meat mixture over this. Lay four stuffed chilies in pairs on meat mixture. Cover with remaining meat. Pour remaining tomato sauce over top and garnish with grated cheese and chili strips. Bake in preheated oven at 350 degrees for 1 hour. Serves 4 to 6. |
