SWEET AND SOUR CHEESE MEATLOAF 
3 lb. ground beef
1 lg. can tomato sauce
1 lb. Velveeta cheese
1/4 med. green pepper, diced
1 sm. onion, diced
1 c. oatmeal
1/2 tsp. dry mustard
1 c. brown sugar
1/2 c. ketchup

Combine in a bowl ground beef, tomato sauce, green pepper, onion, oatmeal and 1/4 teaspoon dry mustard. After all ingredients are thoroughly combined, form into 2 loaves. After loaves are formed, form a ditch through the middle of each loaf. Lay in slices of Velveeta cheese; bring sides over to cover and reform loaf. Bake in oven 30 minutes at 375 degrees.

In bowl, mix Ketchup, 1/4 teaspoon dry mustard and brown sugar. Pour over each loaf. Bake additional 20 minutes at 375 degrees.
