CHOCOLATE BREAD PUDDING | |
3 c. milk, scalded 1 c. sugar 3 tbsp. cocoa 1/2 tsp. salt 3 eggs, separated & beaten 1 tsp. vanilla 1/2 c. stale bread crumbs Scald milk. Place bread crumbs in greased baking dish. Pour 1/2 of the milk over crumbs. Cover dish and let stand a few minutes. Beat egg yolks slightly. Add sugar mixed with cocoa and salt. Add remainder of hot milk. Stir until sugar is dissolved. Add vanilla. Pour over bread crumb mixture. Bake in uncovered dish at 350 degrees 50 to 60 minutes. Do not over bake, leave center part glossy and not as set as the outside, otherwise it will be dry. Beat egg whites. Add 6 tablespoons sugar and vanilla. Spread on pudding and brown the meringue. Serves 6. Best when warm, but also good cold. |
