FAVORITE GROUND BEEF VEGETABLE
SOUP
 
1 1/2 lbs. ground beef
1 med. onion, chopped
3 cans (10 3/4 oz.) beef broth
2 to 3 med. potatoes, pared & cut into 1/2 inch cubes
1 c. sliced celery
1 can (16 oz.) tomatoes, broken up
1 can (8 oz.) tomato sauce
1/2 c. barley
1/2 to 1 tsp. salt
1/2 tsp. pepper
1 pkg. (10 oz.) frozen mixed vegetables
1/4 c. parsley, minced (optional)

In Dutch oven or heavy saucepan, brown the ground beef and onion. Drain off any excess fat. Add broth, potatoes, celery, tomatoes, tomato sauce, barley, salt and pepper. Heat to boiling; reduce heat and simmer for 1 hour. Add mixed vegetables and simmer another 30 minutes. Serve topped with parsley.
