GAZPACHO 
4 c. tomato juice
1/2 c. Catalina French Dressing, reg. or low cal.
1/2 c. finely chopped onion
1/2 c. finely chopped green pepper
1/2 c. finely chopped peeled tomato
1/2 c. finely chopped peeled cucumber

(You can also add some chopped summer squash and string beans.)

Combine all ingredients and chill. Serve with crackers or bread sticks.

Gazpacho is Spain's famous "liquid salad". 6-8 servings.
