MOTHER'S GREEN ENCHILADAS 
1/2 stick butter
2 c. milk
1/2 lb. Velveeta cheese
4 tbsp. flour
1 sm. can green chilies, diced

FILLING:

1 lb. ground beef, browned
1 onion, diced

Flour tortillas, soften in the microwave.

Put 1 tablespoon of meat in each tortilla and roll up. Place the tortillas in a casserole dish.

In a saucepan on low heat cook the milk, butter, flour and chilies until the butter melts. Add the cheese. Stir and pour over the enchiladas. Cook 20 minutes at 300 degrees.

Since microwave ovens vary in power, you may need to adjust your cooking time.
