BAKED CORN WITH SOUR CREAM AND
JACK CHEESE
 
2 eggs
1 1/2 c. sour cream
1 (10 oz.) pkg. frozen corn, thawed
1/2 c. white bread crumbs
1 (4 oz.) can chopped green chilies
1 tsp. finely chopped jalapeno peppers
1 tsp. salt
1/4 tsp. pepper
8 oz. Monterey Jack cheese, cut in 3/4" cubes
1/2 c. grated cheddar or longhorn cheese

Preheat oven to 350 degrees, grease 10" quiche dish or 6 cup shallow baking dish.

DELICIOUS!!!! Was a little nervous becasue I'm a HORRIBLE cook, and wasn't sure how long to cook it, but about 20-25 minutes was PERFECT!!! I also used Monterey Jack / Jalapeno Cheese!
