NANA KELLY'S BOILED RAISIN CAKE | |
1 c. raisins 1 c. water Evaporated milk 1/2 c. butter 1 c. sugar 1 egg 2 c. flour 1 tsp. baking soda 1 tsp. salt 1 tsp. cinnamon 1/2 tsp. allspice 1/4 tsp. cloves 1/4 tsp. nutmeg Preheat oven to 350 degrees. Grease and flour a small tube or fluted pan. Boil 1 cup raisins in 1 cup water for 10 minutes. Drain remaining liquid from raisin mixture into a measuring cup and add enough evaporated milk to equal 1 cup liquid. Take butter and cream together with sugar and egg until smooth. Set aside. Mix together flour and baking soda. Add salt and spices. Mix well. Add flour mixture alternately with milk mixture to creamed mixture. Mix well. Stir in raisins. Pour into pan. Bake for 45 to 50 minutes. Cake is done when toothpick inserted in center comes out clean. |
