BOILED RAISIN CAKE 
1 (15 oz.) pkg. raisins
2 c. water
3/4 c. shortening
1 1/2 c. sugar
1/2 tsp. salt
1 tsp. each cinnamon & nutmeg
1/2 tsp. each allspice & cloves
1 tbsp. baking soda
1/4 c. hot coffee
2 1/2 c. flour

Bring raisins and water to a boil in saucepan. Boil for 1 minute. Combine with shortening, sugar, salt and spices in bowl; mix well. Cool. Dissolve soda in coffee. Cool. Add flour to raisin mixture alternately with coffee; mixing well after each addition. Pour into greased and floured tube pan. Bake at 350 degrees until cake tests done. Cool in pan for 10 minutes. Remove to wire rack to cool completely. Yield: 20 servings.
