CHICKEN PIE | |
1/4 c. butter 1/3 c. flour 1/2 tsp. salt 1/4 tsp. pepper 1 3/4 c. chicken broth 2/3 c. milk 2 c. cubed chicken 1 pkg. mixed vegetables (frozen) (I have substituted other vegetables that my family might enjoy more) In saucepan, melt butter, flour, salt and pepper. Stir in chicken broth and milk. Cook until thick. Cook 1 minute after it bubbles. Add chicken and vegetables. Cook another minute. Pour into greased pan. PASTRY: 1 c. sifted flour 1 tsp. celery 1/2 tsp. salt 1/2 tsp. paprika (optional) 1/3 c. shortening 2 tbsp. cold water Sift flour and spices. Cut in shortening; add water gradually until mixture forms a ball. Roll on floured surface. Roll to fit casserole. Bake 30 to 40 minutes at 425 degrees or until done. |
