PESTO 
1/4 c. finely chopped fresh basil
3 cloves garlic
Salt, if you want
1/2 c. (2 oz.) grated Sardinian pecorino cheese
1/2 c. (2 oz.) grated Parmesan cheese
1 potato, peeled and sliced 1/8 inch thick
3/4 c. olive oil

In blender add basil, garlic, a pinch of salt. As you start to blend add the pecorino and Parmesan cheese a little at a time. Finally, beat in olive oil very slowly.

Boil your water. When it starts to boil add the sliced potato first then your favorite pasta. After the water comes to a second boil cook about 5 to 15 minutes. Drain the water then add the above mixture.
