SPICY HAM STRIPS 
1/2 c. sliced celery
1 tbsp. water
12 oz. reduced fat ham
4 green onions, sliced
1 med. green pepper, chopped
1/2 c. orange juice
1 tbsp. brown sugar
2 tsp. corn starch
1 tsp. pumpkin pie spice

Combine celery and water in 1-quart microwave-safe casserole. Cover with casserole lid. Microwave (high) 1 1/2 to 2 minutes or until celery is bright green. Cut ham into strips 2 inches long and 1/4 inch thick. Add to celery along with onions, green pepper, orange juice, brown sugar, corn starch, and pie spice; mix together. Cover.

Microwave (high) 7 1/2 to 8 minutes or until mixture boils and thickens, stirring once. If desired, serve with rice.

Ham and a light spice glaze heat together in one easy step.

As a substitute for pumpkin pie spice, use 1/2 teaspoon cinnamon, 1/4 teaspoon ginger, 1/4 teaspoon nutmeg and dash of cloves.

Since microwave ovens vary in power, you may need to adjust your cooking time.
