SEVEN MINUTE FROSTING 
Frosts tops and sides of 2 eight or nine-inch layers

1 1/2 cups sugar
1/4 cup water
2 egg whites, unbeaten
1 teaspoon light corn syrup
1/4 teaspoon salt
1 teaspoon vanilla

In the top of a double boiler, combine sugar, water, egg whites, corn syrup, and salt.

Note: If you don't have a double boiler, you can improvise by using a metal bowl that is slightly large than a medium saucepan so that it fits over the top and allows water to boil underneath.

Cook over boiling water, beating constantly with a beater, about 7 minutes, or until frosting stands in stiff peaks. Remove from heat and stir in vanilla, then continue to beat until the frosting is thick enough to spread on cake.

Variation: Substitute packed brown sugar for the white sugar and prepare as above.
