ARMENIAN DOORMA 
4 sm. eggplants
4 lg. green peppers
4 lg. tomatoes
1/2 lb. chopped lamb
1/2 c. rice
1 can tomato sauce
1 tbsp. chopped parsley
Juice of 3 lemons
Salt and dash of red pepper

Scoop out eggplant, peppers and tomatoes. Mix meat, rice, parsley, 1/2 can of tomato sauce and seasoning. Stuff this mixture into eggplant, tomato and pepper shells. Place these "Doorma's" in pan and pour on lemon juice and remainder of tomato sauce. Add water to cover tops. Place flat dish in pan over Doorma's" to keep them from rising. Cook for one hour.
