CARIBBEAN SWEET POTATOES 
4 sweet potatoes (yams) 2 1/2 to 3 lb.
3 bananas (1 1/2 lb.)
1/2 c. butter, melted
1/2 c. orange juice
1 egg, beaten
1/3 tsp. salt
1/4 tsp. nutmeg
1/3 c. dark brown sugar

Bake or microwave potatoes until soft. Peel and mash with bananas, butter, orange juice and egg. Season with salt and nutmeg. Add more orange juice if needed. Place in buttered 2 quart casserole. Sprinkle top with brown sugar. Bake at 350 degrees for 20 minutes or until hot and bubbly. Serve with pork chops or roast turkey.

Since microwave ovens vary in power, you may need to adjust your cooking time.
