SWEET POTATO CASSEROLE 
2 cans sweet potatoes or yams
1/4 c. butter
1/4 c. brown sugar
9 oz. crushed pineapple and juice
1 tbsp. orange rind
1/4 tsp. nutmeg
2 eggs
1/4 c. chopped pecans

Mash sweet potatoes or yams. Melt butter and brown sugar. Add butter and sugar mixture to potatoes. Add pineapple and juice, orange rind, nutmeg, mix thoroughly. Beat eggs until light. Add to potato mixture. Put into 1 1/2 quart casserole dish. Top with pecans. Bake at 350 degrees for 1 hour. Makes a great side dish for Thanksgiving dinner.
