ZUCCHINI CASSEROLE 
3 zucchini, sliced
1 med. onion, sliced
3 slices bacon, halved
6 tbsp. ketchup
2 tbsp. butter
Salt & pepper
1/4 c. Parmesan cheese

Layer 1/2 of zucchini and half of onion in casserole dish. Sprinkle with salt and pepper. Dot 1 tablespoon butter on top. Add 1/2 of bacon. Dot with 3 tablespoons ketchup. Sprinkle 1/2 of Parmesan cheese. Repeat. Bake at 350 degrees for 45 minutes to 1 hour. Cover for first 30 minutes. Remove top to brown and finish cooking. Serves 4-6.
