YAM PIE 
Pastry for 9" shell
2 c. mashed cooked yams
3/4 c. sugar
2 eggs
1 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. ginger
1/4 tsp. cloves
1/4 tsp. salt
1 1/2 c. milk
2 tbsp. melted butter

Press foil into shell. Bake 6 minutes. Remove foil and bake 4 minutes (450 degrees). Combine filling ingredients, pour into shell and bake 15 minutes. Reduce heat and bake 30-40 minutes at 300 degrees. Filling should be set around edges and center slightly off. Serve warm with whipped cream.
