WHITE MOUNTAIN DESSERT 
1 c. dry rice
2 tbsp. lemon juice
1 c. crushed pineapple, well drained
1 c. sugar
1/2 pt. whipping cream

Note: You may substitute Cool Whip for the whipping cream and use only 3/4 cup sugar instead of 1 cup.

Cook rice in boiling water with lemon juice until tender. (The lemon juice makes the rice extra white.) Drain and chill. Fold in pineapple, sugar and whipping cream or Cool Whip. Chill in glass bowl until serving time.
