CHINESE NOODLE SALAD 
2 c. fresh bean sprouts
2 c. cooked chicken or shrimp
1 5 oz. can chow mein noodles
1 can water chestnuts, sliced
1/4 c. chopped celery
1/4 c. minced or ground onions

Note: May add tuna instead of chicken or shrimp.

Mix in large bowl. Toss with dressing.

Dressing:

3/4 c. mayonnaise
1 tbsp. soy sauce
1 tbsp. lemon juice
salt
3/4 tsp. juice of fresh finely grated ginger or 1/4 tsp. powdered ginger

Combine all ingredients.
