CHEESE DELIGHT IN EVERY BITE
CHICKEN
 
3 whole broiler-fryer chicken breasts, halved & boned
1 clove garlic
1/2 c. butter, melted
1 c. fine dry bread crumbs
1/2 c. finely grated sharp Cheddar cheese
1/4 c. grated Parmesan cheese
1 tsp. salt
1/8 tsp. pepper
2 tbsp. corn oil

Add garlic to butter and let stand 20 minutes. Remove garlic. Mix together bread crumbs, cheeses, salt and pepper. Dip breast pieces in butter, then crumb mixture.

Place in large shallow baking pan, tucking sides under to form neat roll. Be sure breast pieces do not touch each other.

Pour 2 tablespoons of corn oil over chicken pieces. Bake at 350 degrees for 45 minutes uncovered until chicken is done, should be able to insert fork with ease. Baste occasionally with pan juices, if desired. Spray pan with Pam first.
