CHICKEN-ZUCCHINI CASSEROLE 
3 c. diced zucchini
2-3 c. diced chicken or turkey
1 c. sliced mushrooms, optional
1 c. chopped onion
1 can cream of chicken soup (low salt)
1 c. sour cream (light)
1 c. shredded carrots
1 (6-8 oz.) pkg. herb stuffing mix
4 tbsp. melted butter

Cook zucchini and onion together; drain.

Combine stuffing mix and melted butter.

Combine all other ingredients; fold in zucchini and onion.

In baking dish (12x8 inch), spread 1/2 stuffing mix, spoon vegetable and chicken mix over rest of stuffing on top.

Bake at 350 for 25 to 30 minutes.
