FARMERS' MARKET CHICKEN 
4 boneless chicken breast halves, skinless (about 1 lb.)
4 c. assorted fast cooking vegetables, suggested: bell peppers, broccoli, cauliflower, cabbage, carrots, mushrooms (rinsed), frozen corn or peas, onions, snow peas, fresh spinach, tomatoes, yellow squash or zucchini
1 env. instant cream of mushroom soup mix
3 tbsp. water
Dash pepper

Arrange chicken around edge of shallow 2 quart round microwave-safe casserole with lid. Place thickest part of chicken towards outside of dish. Place thinly sliced vegetables in center. Blend soup mix and water in small bowl and spoon over chicken and vegetables. Sprinkle with pepper. Cover and microwave on HIGH 7 - 9 minutes turning chicken over once.

Since microwave ovens vary in power, you may need to adjust your cooking time.
