MARY'S KERALA CHICKEN CURRY 
1 fryer, cut up
1 tbsp. oil or butter
1/2 onion, chopped
1 sm. apple, peeled, cored and chopped
1 clove garlic, minced
2 tbsp. flour
1/2 tsp. ginger
1 tbsp. curry powder
1/2 tsp. salt
1 c. chicken broth or bouillon
1/2 - 1 c. plain yogurt

1. Brown chicken in oil or butter. Remove and keep warm.

2. Saute onion, garlic and apple in drippings. Sprinkle flour and seasonings over mixture and cook 2 minutes.

3. Stir in broth. Cook until thickened.

4. Add chicken. Simmer, covered, 35-45 minutes or until tender.
