CURRIED CHICKEN SALAD | |
1/4 c. mayonnaise 2 tbsp. mango chutney 1/2 tsp. curry powder 1/2 tsp. salt 1/8 tsp. nutmeg 1/8 tsp. white pepper 1 c. plain yogurt 3 c. cooked chicken, cubed 2 c. cantaloupe, cubed 2 med. cucumbers, peeled, seeded & cubed 2 cantaloupe, sliced (optional) 1/2 c. slivered almonds, toasted Blend first 6 ingredients in blender. Spoon into medium bowl and stir in yogurt until combined. Cover and refrigerate 3 hours. Just before serving add chicken, cubed cantaloupe and cucumber. If desired place melon slices on plates, mound heaping cup of salad on melon. Sprinkle with nuts. 6 servings. |
