QUICK CHICKEN CURRY 
3 tbsp. oil
1 med. onion, finely chopped
2 cloves garlic, minced
1 med. apple, peeled & grated
1/2 c. finely chopped green pepper
2 tsp. curry powder
1/2 tsp. ginger
1/4 tsp. cumin
1 tsp. salt
3 tbsp. flour
1 1/2 c. chicken broth
2 1/2 c. cooked chopped chicken
1 c. plain yogurt
Peanuts, raisins, coconut, bacon bits, chutney for condiments

Saute onion, garlic, apple and pepper until soft. Sprinkle flour and seasonings over sauteed ingredients and stir. Add broth, chicken and stir until thickened. Stir in yogurt before serving over rice. Serves 6.
