CHICKEN BOMBAY 
Blend in a bowl:

1/4 c. golden raisins
1 qt. plain yogurt
Pinch of ginger
1 clove garlic
Salt & pepper
1 scallion, finely chopped
1 tbsp. curry powder
1 c. long grain rice (not instant)
4 tbsp. apricot preserves
1 med. onion, finely chopped

Add 3 pounds chicken, quartered. Place in a greased casserole. Bake 1 hour at 350 degrees. This may also be cooked in a crock pot.
