LOW ON THE FOOD CHAIN CASSEROLE 
2/3 lb. thinly sliced Cheddar cheese
3 c. cooked brown rice
1 1/2 c. broccoli flowerets
2 lg. tomatoes, thinly sliced
1/2 lb. sliced mushrooms
2 sliced thin carrots
1 onion, sliced
Juice of 1/2 lg. lemon
Soy sauce, approx. 4 tbsp. or to taste

Beginning with rice and ending with cheese, layer all ingredients in a large ovenproof casserole dish twice.

Cover and bake at 325 degrees for 40 minutes. Test for tenderness of vegetables with fork. If necessary, return to oven, checking every 10 minutes.

Serves 4 plus.
