CHOCOLATE CHIP CHEESE CAKE 
1 c. graham cracker crumbs
3 tbsp. sugar
3 tbsp. butter, melted
3 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
3 eggs
1 c. mini chocolate chips
1 tsp. vanilla

Combine crumbs, sugar and butter. Press into 9-inch springform pan. Combine cream cheese and sugar; mix with electric mixer at medium speed. Add eggs one at a time, mixing well after each addition. Blend in chocolate chips and vanilla.

Pour over crust. Bake at 450 degrees for 10 minutes, then 250 degrees for 35 minutes. Loosen cake from rim of pan. Cool before removing from pan. Chill. This is a very simple, but elegant and delicious dessert for company.

NOTE: If you place a pan (shallow) of water underneath a cheesecake while baking, it cuts down on the cracking on the surface of the cake.
