FRIED RICE WITH HAM, EGGS AND
PEAS
 
1 tbsp. oil
2 eggs, slightly beaten
1 tbsp. oil
3 c. cooked rice, cold
1 tsp. salt
1/2 c. frozen peas, thawed or celery
1/2 c. cooked ham, diced
1/2 c. onions, chopped

Heat 1 tablespoon oil in skillet, pour in eggs. As eggs set, push cooked portion aside so remainder cooks. Do not scramble. When eggs are set, put them into a bowl and tear into large shreds. Heat 1 tablespoon oil to medium heat. Add rice and stir until hot. Add salt, peas or celery and ham. Stir fry for 2 minutes. Add shredded eggs and onions and stir. Serve hot.
