MINIATURE CHERRY CHEESECAKES 
2 doz. vanilla wafers
2 (8 oz.) pkgs. cream cheese
1 tsp. grated lemon rind
3 eggs
1/2 c. granulated sugar

TOPPING: Wilderness Pie Filling

Line muffin tins with small size cupcake liners. Place a wafer in bottom of each. Combine cheese, eggs, sugar and lemon rind. Fill cup half full with batter.

Bake at 350 to 375 degrees for 17 to 20 minutes. Cool. Spoon 3 cherries and syrup on top of each. Makes a colorful addition to a tray of assorted bars and cookies.
